A Festive Cinco de Mayo Recipes Roundup
In honor of Cinco de Mayo, I thought I’d round up some of my favorite Mexican recipes and include them in a holiday-themed post for easier reference. And, I thought I’d give a few shout-outs to some of my foodie blogger friends, who have some seriously amazing celebratory recipes that look delicious as well.

Homemade Guacamole & Skinny Margaritas ~ One of my all-time favorite go-to snacks is dipping chips into some fresh, homemade guacamole. And what better to pair with a bowlful of guacamole than a cool margarita. Ahhhh…
Soft Chicken Tacos Recipe with Annie’s Green Garlic Dressing ~ At our house, chicken tacos are a weekly staple. Each week we alter the recipe a bit to test out different flavors. This time, we added Annie’s green garlic dressing to the chicken and we fell in love with it. So good!
Caribbean Dream Fish Tacos with Mango Lime Salsa ~ I shared these two recipes on Parade Magazine. Both recipes are from my cookbook, Kitchenability 101, and I’m including a printable and shareable recipe card for the Mango Lime Salsa below. Note: This salsa is both GREAT as a taco topper and on its own as a dip for chips.
Mango and Black Bean Salsa ~ This is another experimental recipe my husband and I created for Parade. It’s an oh-so-simple and oh-so-good salsa recipe, featuring mango, black beans, tomatoes, corn, jalapeños and more.

Spicy Chicken Tortilla Roll-ups – from Real Housemoms
- 1 ripe mango, peeled, pitted, and diced small (about 1½ cups)
- ½ medium red onion, finely chopped
- 1 jalapeno, finely chopped (include ribs and seeds for a hotter taste)
- 3 Tbsp fresh cilantro, chopped
- 3 Tbsp fresh lime juice
- ½ avocado, peeled, pitted, and diced small (about 1½ cups) peeled, cored, and diced small
- ½ tsp salt
- ½ tsp pepper
- Combine all of the ingredients except the salt and pepper in a bowl.
- Season with salt and pepper.
- Serve with tortilla chips or on Caribbean Dream Fish Tacos.
