Roast Chicken Recipe with Lemon and Herbs

September is National Chicken Month, which means, after a summer filled with salads and grilling, it’s time to start turning those ovens back on and roasting up a flavorful chicken dinner!

This is a quick and easy recipe that requires very little preparation. Just rub your bird down with some olive oil, dust it with herbs, and place some slices of lemon on top and around it, and you’re good to go.

Once you pull it out of the oven, pair it with your favorite fall sides and enjoy!

Roast Chicken Recipe with Lemon and Herbs

Ingredients
  • 3½ lb chicken
  • 1 lemon, sliced
  • 1 Tbsp olive oil
  • 1½ tsp lemon pepper
  • 1 tsp dried parsley
  • ½ tsp dried thyme
  • Salt and pepper to taste
Instructions
  1. Preheat oven to 350℉.
  2. Place chicken in an oven-safe dish. Coat chicken with olive oil, then follow with all of the herbs, salt and pepper.
  3. Slice lemon and place on top of the chicken, and in between the the legs and wings.
  4. Place chicken in the oven for 1 hour and 30 minutes. After 1 hour, raise the temperature to 425℉ for 30 minutes.
  5. Pull the chicken out and serve.
