Money-Saving Work Lunch Ideas
Lunch is probably the toughest meal for me during the week. I get too caught up in the frenzy of the morning to really think about it and plan ahead. I’m usually trying to shove some form of breakfast in my mouth, as well as grab a much-needed coffee to allow me to preform like a functioning human being.
Honestly, lunch becomes a bit of a second thought until halfway through the day, when my belly starts to grumble.
Lately, I have been trying to eat healthier for my midday meal. I am in love with Gourmet Gang’s Greek salad. It’s probably the best Greek salad I have ever had. Now, I am not saying going out to eat every day is possible for some people — especially for me. I certainly can’t go out every day for lunch. But, I do like to find things to then recreate at home. For example, this Greek salad has mixed greens, sun-dried tomatoes, homemade croutons, feta cheese, red peppers, kalamata olives and balsamic vinaigrette.
My next mission is to start making a homemade version of this amazing salad to bring to work with me, which will, in turn, help out my wallet!
