Quick and Healthy Back to School Recipes
It’s hard to believe summer is quickly drawing to a close.
The end of summer means the beginning of the new school year for many, and a new school year means busy schedules for students and families.
The spirit behind Kitchenability stemmed from my busy college days, when I was trying to eat quick, healthy meals that could be prepared with limited cooking space and supplies. For many it’s a daunting challenge. But, my hope is the recipes I provide here and in my cookbook, Kitchenability 101, look easy and fun enough to entice you over that fear-of-cooking hump.
This first back to school recipe for my Honey-Breaded Chicken Tenders (pictured above) is more for busy moms, or for college students that have access to an oven. It’s a simple, sweet and healthy alternative to the classic, deep-fried chicken strips. You can read more about them on my blog at Parade Magazine.
Next is one of the most popular breakfast recipes from my book and from the site, my Banana Cinnamon Waffle Sandwiches. These can be made for students of all ages. And all you need is a toaster oven and a dorm-sized fridge to store the waffles. Remember: Breakfast is an important meal!
It’s also important to keep some healthy snacks with you during the day. That way, when you get hungry, you have something healthy with you to keep your energy fueled. My favorite quick snack to nibble on throughout the day is my Nutty Trail Mix. It’s fun to experiment with new mixes throughout the week, too.
