Meatless Mondays: Eggplant Parmesan Recipe
I decided to participate in the Meatless Monday movement this week.
If you can believe it, I’m a culinary school grad, yet I’d never made Eggplant Parmesan before. There’s a first time for everything and this awesome dish became my first “Meatless Monday” meal.
Before I started cooking, I asked around a bit, questioning a few people I knew who had made it before. And, everyone’s method was a bit different — some baked, some fried, you name it!
I decided to keep things simple. I coated the sliced eggplant in bread crumbs and a little Parmesan cheese. Then, at the last minute, I put a little mozzarella on top.
I served it up with spaghetti and tomato sauce. I kept it super simple since it is Monday after all, and I had a long day at work. I used Bertolli’s organic tomato sauce, which was another tasty time saver.
