Gluten-Free “Caesar Salad” Pasta Recipe

Gluten-Free Caesar Salad Pasta Recipe - KitchenabilityThis is a gluten-free, soy-free recipe that is delicious! And, it was super easy to make in my rice cooker, which means it’s a great recipe for those of you cooking in small kitchens and dorm rooms.

I made this the day before Hurricane Sandy hit for one of my best friends who has quite a few food allergies. I actually love to cook for her because it challenges me and encourages me to cook out of my comfort zone. And, this latest creation ended up being quite a hit.

At first, when we were tasting the pasta dish, we were like, “hmmm…interesting,” but then it hit us: It tastes like a warm Caesar salad!

Gluten-Free “Caesar Salad” Pasta Recipe

  • 1/2 lb of brown rice noodles
  • 1 cup romaine lettuce 2-3 leaves

  • 2-3 lemons (depends on how citrus-y you like it)
  • 2 garlic cloves chopped or 2 tsp dried garlic
  • 2 tsp fresh parsley or 1 tsp dried
  • 1/4 cup olive oil
  • Salt and pepper to taste

1. Pour water into the rice cooker and allow the water to get to a high simmer, very close to a boil
2. Add in pasta and watch closely; boil till al dente (just a tad under done)
3. Pull and drain pasta
4. Squeeze lemons and pour olive oil into a bowl
5. Mix in garlic, parsley, salt and pepper till the sauce is to your desired taste
6. Chop romaine lettuce
7. Add pasta back in rice cooker, and then toss in the romaine and the sauce; let marinate together
8. If desired, top with a little Parmesan cheese
