10 Fun and Fresh Summer Salads

Summer is a time for salads.

So many wonderful fruits and veggies are in season, like apricots, strawberries, avocados, tomatoes, corn, cucumbers, peppers… You name it, it’s probably in season during summertime. And, we often don’t feel like heating up our houses with a bunch of baking, roasting and sautéing during the summer months, so throwing together a quick, crisp salad is often a great solution for a no-heat-required meal.

I blogged about a few of my favorite summer salads for Parade Magazine, like my Strawberry and Goat Cheese Salad (pictured above), my Remixed Caprese Salad with Sun-Dried Tomatoes and my Easy Macaroni Salad with Herb Garden Vinaigrette, and it got me poking around on other food blogs looking for other creative salad ideas for the season.
