Easy Banana Bread with Chocolate Chips
I absolutely love banana bread! 🍌🍞
I actually get excited when I see those brown bananas sitting on the counter, because that means a batch of delicious, warm banana bread can be made. The riper the banana, the better!!!
My love of banana bread started at an early age, because my mom used to bake it all the time. I remember when I was in school, I would always wake up to her wrapping a large piece of banana bread in wax paper and handing it off to me with a glass of milk. She would also throw a few chocolate chips in there as well, and it added an amazing, extra layer of sweetness.
This past weekend, I looked over at my counter and saw about six bananas that had turned brown, and figured… why not whip up a batch? I called my mom and asked her for the recipe she always used, but she wasn’t at home and said she honestly didn’t have one.
So, since I’m not a baker by trade, and because I didn’t want to mess it up, I went in search of an easy, delicious recipe online. I came across this recipe for Super Simple Banana Bread from EazyPeazyMealz.com, and I gave it a go. I doubled the recipe, and it made one, good-size loaf. I used six bananas instead of three, which made it very moist, and I only put in 1/2 cup of sugar. And, of course, I added in chocolate chips!
I also loved this recipe because directions were very simple and all of the ingredients could be added all at once. Plus, there were only three steps!!! My kind of recipe — especially since I was in the middle of trying to plan for dinner that night, too.
I baked it for the recommended time (about 50 minutes). Despite me doubling the recipe, it didn’t affect the cook time at all. It was golden brown on the top and moist and fluffy all the way through.
I made one loaf and it didn’t last long. Billy took about half of the loaf to work and I heard nothing but good things. Then, friends came over the following day asking for a slice or two. By Sunday, we aware down to two slices — perfect with a cup of coffee. ☕️
I plan on making more soon; I just have to wait for more bananas to ripen up!
It was a truly successful, yummy treat and, honestly, it put me into the fall spirit, too. The house smelled amazing! It was the start of many delicious and fun dishes to come.
