Spinach and Ricotta Stuffed Manicotti Recipe

Now that winter is in full swing, and the days are growing colder and colder, I tend to gravitate toward comfort foods!

This spinach and ricotta stuffed manicotti recipe is full of flavor and easy to make. Have the kids or family help out too, and create an assembly line when you are stuffing the manicotti. Kids love to get their hands dirty. Plus, they say when they are helping, or being a part of the process of making dinner, they are more willing to try new things!

Food brings people together, and I promise you this recipe won’t disappoint you or your family. It is a great weekday meal that any novice cook can whip up in a timely manner — it cooks in about half an hour!

Spinach and Ricotta Stuffed Manicotti

Ingredients
  • 1 (10 oz) block frozen spinach
  • ½ yellow onion, diced
  • 2 Tbsp butter
  • ½ Tbsp garlic, minced
  • 2½ cups ricotta cheese
  • 2 Tbsp fresh parsley, chopped
  • 1 tsp dried basil
  • 1 tsp dried Italian seasoning
  • salt and pepper to taste (about ½ tsp)
  • ½ cup Parmesan cheese, freshly grated
  • 2 eggs
  • ½ jar of your favorite red spaghetti sauce
  • 2 Tbsp water
  • 2-3 cups shredded Italian cheese
Instructions
  1. Pre-heat oven to 400℉.
  2. In a large pot, boil water for pasta. Then, add in manicotti and cook till al dente (about 7 minutes).
  3. Drain pasta and rinse well with cold water to stop the cooking process. Set aside.
  4. Place a sauté pan on medium-high heat and add the 2 Tbsp of butter, diced onion, garlic and spinach. Cook till spinach is completely cooked through, and there are no frozen spots left. The onions should become caramelized and turn a light brown color. Turn off heat and set aside.
  5. In a large bowl, place ricotta cheese and Parmesan cheese, and then add in spinach mixture. Mix well.
  6. Then, add in your spices: parsley, dried basil, dried Italian seasoning, salt and pepper. Mix well. Add in two eggs and mix again till all is combined.
  7. Spray your casserole dish with Pam or rub down with extra butter to help from sticking.
  8. Grab your manicotti and get stuffing. With a spoon, scoop the spinach-cheese mixture inside the manicotti. Once full, place in casserole dish, and line them next to one another.
  9. Pour 2 Tbsp of water into the casserole dish.
  10. If there is any filling left over, place on top of the manicotti, and spread evenly.
  11. Pour spaghetti sauce on top, and then top with Italian cheese.
  12. Cover with aluminum foil and bake for 30 minutes.
