Healthy Omelet Recipe with Spinach and Sun-Dried Tomatoes

Looking for a delicious way to jump-start your day? Try this healthy, protein-packed spinach and sun-dried tomato omelet I originally prepared for my Parade Magazine blog.

You can use this basic omelet recipe as your starting point and then mix and match all sorts of tasty, seasonal ingredients, depending on what kinds of veggies you have in the fridge.

For starters, though, you have to try this spinach and sun-dried tomato combo because it’s just so good!

Spinach and Sun-Dried Tomato Omelet

Ingredients
  • 3 eggs
  • ½ cup fresh leafy spinach
  • 1 Tbsp sun-dried tomatoes
  • 2 slices bacon, cooked and crushed
  • Salt and pepper, to taste
  • 1 sprig parsley, for garnish (optional)
Instructions
  1. In a large bowl, scramble eggs with a fork till slightly foamy.
  2. Add in spinach, sun-dried tomatoes, and cooked bacon. Mix well again with fork.
  3. Pour egg mixture into a sauté pan and allow it to cook for about 2 to 3 minutes on medium heat, until edges are cooked, lifting the sides to make sure it does not stick to pan.
  4. Once the sides are cooked slightly, lift and fold the egg mixture over on top of itself to further cook the omelet. Cook for another 3 minutes or so until done.
  5. Serve with a garnish of parsley.
