Stuffed Chicken Breast Recipe with Goat Cheese and Artichokes

The only thing better than a perfectly breaded and baked chicken breast, is a perfectly breaded, baked and stuffed chicken breast!

This was a fun dish to create. I kind of did this one on a whim after a long day at work. I put on some tunes, poured a nice glass of wine, rolled up my sleeves and got to work, playing with exactly which flavor profiles I wanted to combine.

In the end, I decided on the following stuffed chicken breast recipe, with goat cheese and artichokes. I hope you enjoy! It was delicious!

Stuffed Chicken Breast Recipe

Serves: 2
Prep time: 20 minutes
Total time: 1 hour

  • 2 chicken breasts
  • 4 tbsp goat cheese
  • Salt and pepper to taste
  • Pinch of dried garlic
  • Pinch of dried parsley
  • 1/2 can artichoke hearts, chopped
  • 4 tbsp Panko bread crumbs
  • 1 tbsp olive oil

1. Pre-heat the oven to 375 degrees.

2. Place chicken breasts in a plastic bag and, with the back of a sauté pan, pound very thin.

3. Chop artichoke hearts. Set aside.

4. Take chicken out of the plastic bag, place on a cutting board and rub 2 tbsp of goat cheese in the middle of each chicken breast. Place chopped artichokes on top.

5. Roll chicken breast up like a rug till it is nice and tight, make sure no filling falls out. Sprinkle each breast with a pinch of dried garlic and parsley. Add salt and pepper to taste.

6. Place chicken on a baking sheet. Mix Panko bread crumbs with olive oil. Place bread crumbs on top of chicken.

7. Bake chicken for 40 minutes till golden brown.
