Parmesan Meatloaf Recipe with Sweet BBQ Sauce Glaze

Meatloaf is a true American classic! And, everyone seems to have their own fixings when it comes to creating their own version of it, so I thought I would take a stab at concocting my own meatloaf recipe.

This is very different from what I usually post. It’s a little more “down home”-style, but trust me this is easy to make and delicious!

A lot of people use ketchup on their meatloaf, but I decided to use Sweet Baby Ray’s BBQ Sauce instead. And, I paired it with mashed potatoes and green beans. Yum!

Parmesan Meatloaf Recipe

Makes: 4 servings
Prep time: 20 min
Cook time: 1 hour

For the meatloaf:

  • 1 lb ground beef
  • 1 egg
  • 1 tsp red pepper flakes
  • 1 cup Parmesan cheese, grated
  • 1 cup Panko bread crumbs
  • 1/2 cup milk
  • 2 tsp onion salt
  • Salt and pepper to taste

For the glaze:

  • 1/2 cup Sweet Baby Ray’s BBQ Sauce
  • 1 tbsp brown sugar

 

1. Preheat the oven to 350 degrees.

2. In a large bowl, place the ground beef, egg, red pepper flakes, Parmesan cheese, Panko bread crumbs, milk,  and onion salt. Mix well. Add salt and pepper to taste.

3. Mold your ground beef mixture into a log and place on a cookie sheet lined with aluminum foil.

4. Place in the oven and bake for 1 hour.

5. Make the glaze when the timer reaches about 10 minutes left on the meatloaf.

6. Mix the BBQ sauce and brown sugar in a pot on low heat until a slight bubble appears. Turn off heat, pull the meatloaf out, and pour your glaze over the top. Place back in the oven till done.

7. Cut and serve. Enjoy.
