How to Cook an Onion: Sweat, Saute and Caramelize
Beginner cooks often ask me for tips on the different ways to cook an onion. The onion is a very versatile veggie that, depending on how it’s cooked, can add a variety of flavor profiles to dishes.
Here are the three main ways to cook an onion:
How to sweat onions: Sweating an onion means cooking it (usually covered) over low heat in a small amount of butter or oil (fat). The main reason to sweat vegetables is to soften them and to release the moisture in them, or to “sweat” them.
How to saute onions: Heat a small amount of oil in a frying pan. Saute on medium to high heat until the onions brown nicely. (Note: You can use any type of fat source, like butter or oil, when you saute.)
How to caramelize onions: Place a large skillet or saucepan on the stove and add a small amount of fat. Heat the oil to a medium-high temperature. Add in onions, coat with the oil and stir. Keep stirring until the onions get darker and darker. Stir until the onions are a nice rich brown. If the onions stick to the pan, deglaze the pan with a dash of water or wine.
