I’m putting my friend Manasi in the spotlight for this post, which features a version of her Pineapple Halwa recipe, also known as sheera.
This is Manasi’s story in her own words: “This recipe is quite famous throughout India, and both my mom and grandma often cook different variations of the same general dish.
I am sharing one of these variations with you, but feel free to freestyle the dish by mixing in other fruits (preferably tropical) and such.
It’s an easy dish that should take less than 20 minutes to prepare and it’s really, really sweet, which is great for people with a sweet tooth — like me!”
Pineapple Halwa Recipe
- 1 cup of pineapple, peeled and chopped (or use canned pineapple chunks)
- 1 cup semolina (rawa/suji)
- 1 cup ghee (get this in Indian stores)
- A pinch of saffron
- 1 cup of sugar
- 5 - 6 almonds
- 5 - 6 cashew nuts (optional)
1. Heat ghee in a pan, add semolina and cook stirring continuously till it turns golden brown
2. Add saffron and mix
3. Add pineapple and further cook for two to three minutes
4. Add two cups of water, mix, cover and cook on medium heat for three minutes
5. Add sugar and mix
6. Keep stirring till all the moisture evaporates and semolina is cooked completely
7. Garnish with cashew nuts and almonds and serve hot
