Happy Monday, everyone! I hope your week is starting off sweet. It should be, because it’s National Oatmeal Cookie Day!

Pistachios are my favorite nut. And I firmly believe it isn’t possible to eat just one. Have you ever tried? Impossible! They are just too good. And, eating a bunch of pistachios is actually okay — as long as you don’t eat the whole bag — because they contain fewer calories and more potassium and vitamin K per serving than other nuts. (more…)

This past weekend I had the honor of helping to host a baby shower for one of my dearest friends. I cooked all of the food at the party, and man did I cook!
I made a lot of different appetizers, including several items from Kitchenability 101, like my Sweet Chili Cranberry Meatballs, Pigs in a Snuggie, asparagus wrapped in bacon, and Mediterranean pasta.
I also made cucumber tea sandwiches shaped like owls to fit with the party’s theme. Everyone loved them! (more…)

Once it’s cleaned and all ready to go, I didn’t want to leave you hanging without any tips on what to do next, so I’m also including one of my favorite snack time artichoke recipes. (more…)

My best friend has a lot of food allergies and is restricted from eating certain things like dairy, soy, and wheat — to name a few. So, since she’s so limited, we decided to make our own granola bars, fruit roll-ups and rice krispie treats — all made from ingredients she can eat. (more…)
