In honor of this very special, once-a-year occasion, I thought I’d share my remix of the traditional oatmeal raisin cookie: my Oatmeal Cranberry Cookie recipe!

Yep, that’s right. Today is National Pistachio Day. Thank you to The Nibble, by the way, for posting such an awesome national food holidays calendar. I like to check it out from time to time to see what upcoming foods or dishes are being honored, so I can help celebrate on Kitchenability. Like, with the pistachio. Seriously.

Pistachios are my favorite nut. And I firmly believe it isn’t possible to eat just one. Have you ever tried? Impossible! They are just too good. And, eating a bunch of pistachios is actually okay — as long as you don’t eat the whole bag — because they contain fewer calories and more potassium and vitamin K per serving than other nuts. Baby Shower Menu: Cucumber Tea Sandwich Recipe

cucumber mint sandwichesThis past weekend I had the honor of helping to host a baby shower for one of my dearest friends. I cooked all of the food at the party, and man did I cook!

I made a lot of different appetizers, including several items from Kitchenability 101, like my Sweet Chili Cranberry Meatballs, Pigs in a Snuggie, asparagus wrapped in bacon, and Mediterranean pasta.

I also made cucumber tea sandwiches shaped like owls to fit with the party’s theme. Everyone loved them! (more…)
