Happy St. Patrick’s Day!
It’s time to prepare some classic Irish dishes to go along with our green beer (or, with a nice pint of Guinness).
One of my favorite celebratory dishes to prepare this time of year is traditional Irish potato soup. Although this is a classic dish, everyone’s recipe for it is different. I’ve included a link to one from YourIrish.com below. (more…)

I made my first-ever chutney recently, which I originally blogged about at Parade Magazine. It was a blackberry chutney, which I made as a topper for some homemade pimento cheeseburgers. Delicious! (more…)

I once had the honor of helping to host a baby shower for one of my dearest friends. I cooked all of the food at the party, and man did I cook!
I made a lot of different appetizers, including several items from Kitchenability 101, like my Sweet Chili Cranberry Meatballs, Pigs in a Snuggie, asparagus wrapped in bacon, and Mediterranean pasta.
I also made cucumber tea sandwiches shaped like owls to fit with the party’s theme. Everyone loved them! (more…)

Sweet potato soup is one of my favorite healthy “treats” to make during the holiday season.
It’s sweet. It’s seasonal. And a bowlful or mugful of this will really hit the spot on the coldest of December days. (more…)

I recently got married and enjoyed an amazing honeymoon trip to the Caribbean island of Antigua, where we managed to sample quite a bit of the local cuisine.
And, now that I’m back home, I’ve been inspired to try and recreate some of my favorite dishes from the trip, one of which was this classic jerk chicken sandwich. (more…)

Still trying to figure out what to do with all of that leftover Thanksgiving turkey?

I am now taking salads to work almost every day, and this spinach salad with pumpkin seeds and grapes happens to be my favorite.
It’s an easy, healthy lunch recipe that only has 3 to 4 ingredients, and it’s delicious! The sweetness of the grapes mixed with the crunch of the pumpkin seeds is seriously tasty.
I usually use balsamic vinegar for my dressing, but it’s totally up to you. Also, I will occasionally top it off with some grilled chicken breast for extra protein. (more…)

The jalapeños in these sliders give what might otherwise be a traditional recipe more kick and flavor. I usually deseed my jalapeños, but you can always leave a few in if you want to make the recipe spicier.
Another trick I like is to grate and mix the cheese in with the meat; the result is a much juicier burger than you’d get by placing a slice of cheese on top. (more…)

Yes, it’s almost Independence Day, but it could also be easily referred to as National Cookout Day.
And, since many of you will either be planning your own cookouts or figuring out something to bring to someone else’s celebration, I thought I’d round up all of the Fourth of July recipes that have been swirling around on Kitchenability and on my blog channel at Parade Magazine lately. Enjoy! (more…)
