One of my favorite fall/winter meals to make is this Chicken Chili recipe, which is super fast and easy to whip up. And, this was all cooked up in my rice cooker, so it’s an easy meal to prepare even in the smallest of kitchens or dorm rooms.
Cook up a big batch to share, or fill up a mug with the leftovers for quick grab-and-go meals all week long.
Also, did you know that October is National Chili Month? And the first week of October is specifically National Chili Week? Even more reason to get cookin’! (more…)

Did you know you can use a rice cooker to cook much more than just rice? This tidbit becomes especially handy when you’re trying to cook in a dorm room or in a small kitchen without an oven or stove top.
I am lucky enough to be cooking in a full kitchen now, but when I was in college (and when we were remodeling our current kitchen), having a few good rice cooker recipes up my sleeve was a life saver. I was able to still eat healthy, hot meals without having to spend a fortune eating out. (more…)

Remember how I said I went nuts cooking leading up to Hurricane Sandy? Well, I wasn’t kidding. My rice cooker really got a work out! This is another quick and easy rice cooker recipe that can be whipped up in the smallest of kitchens. All you need is a rice cooker and a knife to chop up your veggies.
This is another great meal that can be cooked in bulk at the beginning of the week and eaten either hot or cold for mini meals throughout. (more…)

This is a gluten-free, soy-free recipe that is delicious! And, it was super easy to make in my rice cooker, which means it’s a great recipe for those of you cooking in small kitchens and dorm rooms.
I made this the day before Hurricane Sandy hit for one of my best friends who has quite a few food allergies. I actually love to cook for her because it challenges me and encourages me to cook out of my comfort zone. And, this latest creation ended up being quite a hit.
At first, when we were tasting the pasta dish, we were like, “hmmm…interesting,” but then it hit us: It tastes like a warm Caesar salad! (more…)

As many of you know, I am going through my very first and hopefully last kitchen renovation. I do not have a sink, oven, or counter tops at the moment. As such, I am truly finding alternative ways to cook and eat easy, healthy and delicious food.
Well, I’m happy to report that last night was a success in my non-existent kitchen!
Lately I have been getting pretty good with using the rice cooker for more than just cooking rice. I made homemade garlic olive oil sauce, mixed with parsley, Parmesan cheese, and Kielbasa. Very simple and very tasty. (more…)

As many of you know, my kitchen is under construction. So, I have been using a rice cooker, slow cooker, and microwave for cooking my daily dinners lately. And, with a little bit of creativity, I have been finding ways to still have a great meal every night.
Tonight was no exception. I made the following quick-and-easy pasta dinner all in my rice cooker! This took no time at all and could easily be made in a dorm room.
