Superfood Snacks: Kale Chips Recipe

Kale is a superfood that resides in the collards, Brussels sprouts, and collards family.

Kale can be a bit intimidating to the uninitiated, but it’s time to familiarize yourself with this amazing veggie, because it’s seriously good for you. One cup of this green goodness holds over 100% of your daily value of A, C and K vitamins. It is also packed with many antioxidants.

How to Cook Kale

In addition to making a tasty, sauteed side dish, kale is also often used in soups and in those vibrant, green superfood smoothies you see. And, you can make them into chips! The leafy greens cook down if made into a soup, but they crisp up if made into kale chips.

Over this past weekend, my Mom went on and on about how much she loved kale chips. She makes them a lot, and swears by them. I personally had never made kale chips, so I thought I would give it a go.

Result? They are so delicious and super healthy. Honestly, I think I will be making them a lot more.

Here is the kale chip recipe my Mom swears by. This is a super easy snack and a super healthy finger food!

Kale Chips Recipe

  • 1 bunch kale
  • 1 ½ tbsp. olive oil
  • Salt (to taste)

1. Wash and dry kale thoroughly. Pre-heat oven 350 degrees.

2. With a sharp knife, or with kitchen shears, cut the leaves away from the thick steams.

3. Cut the leaves into bite-sized pieces and place on a cookie sheet.

4. Drizzle with olive oil and sprinkle with salt.

5. Place in the oven for 10 minutes until nice and crispy (browned but not burnt).
