With the super cold temperatures, and the snow and ice falling in Virginia Beach, I’ve had some time to really get cooking at home lately!
Over Valentine’s Day weekend, my husband and I whipped up some salmon, mashed potatoes and asparagus for dinner. I used a recipe for a Creamy Dill Sauce from TasteOfHome.com for the salmon, which my father in law discovered and shared with us. (more…)

It’s the day after Thanksgiving and it also happens to be National French Toast Day! I say continue to indulge by serving up some homemade french toast for a post-Thanksgiving brunch.
One of my favorite french toast recipes is my Nutella French Toast—one of the many tasty treats showcased in my cookbook Kitchenability 101.

Sometimes it’s hard to remember to eat healthy foods in the mornings. Especially when you’re running around trying to get out of the house to get to school or to work on time. But, and I know you aren’t hearing it here first, eating a nutritious breakfast is extremely important.
So, I’ve been trying to up the healthiness quotient of my mornings lately.
My breakfast du jour nowadays is a big bowl of plain oats topped with a variety of fresh fruit from the farmer’s market. It is delicious! And it’s really easy to make. Just add some water to your oats (following the water-to-oats ratio instructions on the container) and cook them up either on the stove top or in your microwave. Then, slice up some fresh fruit (whatever you have on hand) and toss it on top. (more…)

Sweeten up breakfast this weekend with this deliciously gooey recipe for a homemade cinnamon roll casserole that’s topped with butter, spices, brown sugar and lots of icing.
It might quite possibly be one of the best baked breakfast treats ever created. And, it’s really easy to make — even for the novice baker. The trick is to buy the ready-to-bake roll of cinnamon rolls from the store, and then to doctor them up a bit to make them even more sinfully delicious. Yum! (more…)
