Happy St. Patrick’s Day!
It’s time to prepare some classic Irish dishes to go along with our green beer (or, with a nice pint of Guinness).
One of my favorite celebratory dishes to prepare this time of year is traditional Irish potato soup. Although this is a classic dish, everyone’s recipe for it is different. I’ve included a link to one from YourIrish.com below. (more…)

I love making this crock pot roasted chicken recipe because it really makes pulling together a fast and flavorful meal so simple. And by cooking chicken in your crock pot, you’ll end up with really moist meat that’s actually rotisserie-like in flavor. Yum! (more…)

With the super cold temperatures, and the snow and ice falling in Virginia Beach, I’ve had some time to really get cooking at home lately!
Over Valentine’s Day weekend, my husband and I whipped up some salmon, mashed potatoes and asparagus for dinner. I used a recipe for a Creamy Dill Sauce from TasteOfHome.com for the salmon, which my father in law discovered and shared with us. (more…)

Once I plate the enchiladas, I like to top them off with (more…)

If you love manicotti, you’ll love this version.
I like to add sun-dried tomatoes, artichoke hearts, and red pepper flakes to the filling, which gives the dish more depth. Also, make note of this go-to tomato sauce recipe. It’s great on all sorts of pasta dishes and as a dipping sauce for bread! (more…)
