Did you know this Sunday, August 31 is National Trail Mix Day?

I love to assemble different varieties of trail mix for easy and healthy grab-and-go snacks. I buy different nuts and treats and create different mixes to keep things interesting.

One of my favorite mixes, which you can find in Kitchenability 101: The College Student’s Guide to Easy, Healthy and Delicious Food, has been dubbed “Nutty Mix.” I’ve included the recipe below. It’s super easy to mix up, toss in your bag and head off to class. (more…)

Nisa Burns on The Hampton Roads Show

I filmed another segment for The Hampton Roads Show this week. And as you can see in the photo above, I had a lot of fun serving my hummus to the show’s co-host Chris Reckling. Ha!

Hummus is a great, quick, protein-packed snack. It’s easy to whip up in advance in your food processor or blender and then store for quick, portable snacks to chomp in between classes. I like to dip cut-up, raw veggies like carrots and celery in mine, or you can scoop it up in some pita bread. (more…)

Pasta with Garlic Sauce and KielbasaAs many of you know, I am going through my very first and hopefully last kitchen renovation. I do not have a sink, oven, or counter tops at the moment. As such, I am truly finding alternative ways to cook and eat easy, healthy and delicious food.

Well, I’m happy to report that last night was a success in my non-existent kitchen!

Lately I have been getting pretty good with using the rice cooker for more than just cooking rice. I made homemade garlic olive oil sauce, mixed with parsley, Parmesan cheese, and Kielbasa. Very simple and very tasty. (more…)

Rice Cooker Pasta DinnerAs many of you know, my kitchen is under construction. So, I have been using a rice cooker, slow cooker, and microwave for cooking my daily dinners lately. And, with a little bit of creativity, I have been finding ways to still have a great meal every night.

Tonight was no exception. I made the following quick-and-easy pasta dinner all in my rice cooker! This took no time at all and could easily be made in a dorm room.
