The other day, Archer, my puppy, had his once-a-week play date with his buddy Maddie — a sweet silver lab puppy. Maddie’s owner, Jenny, has become a good friend of mine, so on our puppy play dates we’ve been having lunch and catching up!

This week, I decided to make us something quick and picnic-y to eat: a turkey provolone pesto sandwich on French bread, with a side of tomato bisque for dipping. Yum, right?
First, I have to admit: I snagged the tomato bisque from Whole Foods. (Sometimes, knowing where to buy the best, tastiest, pre-made foods is half the battle!)
As we were digging in to our sandwiches and smiling at our cute puppies playing, she mentioned how much she does as a mom. She has three kids, most of whom are enrolled in sports and a variety of other activities, so she has trouble finding time to make dinner. During the week, everyone is on a different schedule, so it just becomes hectic and hard!
I told her these sandwiches took me no time at all, and she could easily make them ahead of time and wrap them in aluminum foil to keep them warm for her kids — who are running here and there and everywhere. Easy!

Turkey Provolone Pesto Sandwich Recipe
- 2 slices of thick French bread
- 4 tbsp pesto sauce
- 3-4 small slices tomato
- 3 slices provolone cheese
- 3 slices of turkey
1. First, preheat the oven to 350 degrees F
2. Smear the pesto on the bottom and top pieces of French bread
3. Next, layer the cheese, meat and tomatoes onto the bread, close up the sandwich and place on a cookie sheet
4. Place in the oven until the cheese has melted fully and bread is slightly golden brown (approximately 10 minutes)
5. Once sandwiches are done, cut in ½ and serve with soup of by itself
