No matter what I’m up to or how busy I am, I always take the time to stop and have lunch. I know what I like and what gives me the midday energy boost I need, so I typically end up having roughly the same lunch every day. And, I wanted to share it with you!
I like to make a quick turkey sandwich, with provolone cheese, lettuce, pickles and mustard on whole grain bread. And, I’ll usually have some sort of fruit on the side, depending on what’s in season and what we have available around the house: like grapes, apples, etc. And, of course, I have to nibble on one of my favorite guilty pleasures of all time — Kettle-brand salt and vinegar chips. They are so addictive!
Lunch is an important meal that should not be skipped. In fact, it’s a good idea to ingest the bulk of your day’s fuel during your midday meal.
Even if you’re crunched for time, grab an apple, scoop up a handful of nuts or make a sandwich, wrap it up, and toss it in your bag for later.
