I recently made the flatbread pizza recipe pictured above for my Parade Magazine food blog, and I wanted to share it with you on Kitchenability as well. It’s a Pear and Goat Cheese Flatbread Pizza (click for recipe), topped with fresh arugula and prosciutto. So. Good.

Meatloaf is a true American classic! And, everyone seems to have their own fixings when it comes to creating their own version of it, so I thought I would take a stab at concocting my own meatloaf recipe.

This is very different from what I usually post. It’s a little more “down home”-style, but trust me this is easy to make and delicious!

For this Baked Herb Lemon Chicken recipe, you can either buy a whole chicken and whack it in half, or buy two chicken halves.

It’s a really easy and healthy baked chicken recipe that pairs well with tons of sides. I opted to pair mine with homemade mashed potatoes, roasted asparagus and sautéed mushrooms and onions.

I decided to participate in the Meatless Monday movement this week.

If you can believe it, I’m a culinary school grad, yet I’d never made Eggplant Parmesan before. There’s a first time for everything and this awesome dish became my first “Meatless Monday” meal.

Before I started cooking, I asked around a bit, questioning a few people I knew who had made it before. And, everyone’s method was a bit different — some baked, some fried, you name it!
