Healthy Lunch Recipe: Spinach Salad with Pumpkin Seeds and Grapes

I am now taking salads to work almost every day, and this spinach salad with pumpkin seeds and grapes happens to be my favorite.

It’s an easy, healthy lunch recipe that only has 3 to 4 ingredients, and it’s delicious! The sweetness of the grapes mixed with the crunch of the pumpkin seeds is seriously tasty.

I usually use balsamic vinegar for my dressing, but it’s totally up to you. Also, I will occasionally top it off with some grilled chicken breast for extra protein. (more…)

Summertime Asparagus Salad Recipe

I’m always looking for new summery side dishes to bring to picnics and BBQs, or just to enjoy with a weeknight meal at home.

This summer salad is easy, healthy, and delicious. You can either toss the asparagus on the grill, or follow my stove top instructions below. Then, simply mix the asparagus with some fresh garden tomatoes and mozzarella, drizzle some balsamic glaze on top, and… voila! (more…)

As a chef and baker herself, she knows her way around the kitchen. Not only is she inspiring, but her food is fantastic! This is a recipe all her own, and I recently had the pleasure of accompanying her to make it.

I can tell you, as pretty as it looks, it tastes just as good! And it’s one of the best 4th of July recipes!

Summer is a time for salads.

So many wonderful fruits and veggies are in season, like apricots, strawberries, avocados, tomatoes, corn, cucumbers, peppers…you name it, it’s probably in season during summertime. And, we often don’t feel like heating up our houses with a bunch of baking, roasting and sauteing during the summer months, so throwing together a quick, crisp salad is often a great solution for a no-heat-required meal.

I blogged about a few of my favorite summer salads for Parade Magazine, like my Strawberry and Goat Cheese Salad (pictured above), my Remixed Caprese Salad with Sun-Dried Tomatoes and my Easy Macaroni Salad with Herb Garden Vinaigrette, and it got me poking around on other food blogs looking for other creative salad ideas for the season.
