Simple Roasted Crock Pot Chicken Recipe

Crock pot recipes are great any time of year, but especially so with this late-season winter weather we’re having!

I love making this crock pot roasted chicken recipe because it really makes pulling together a fast and flavorful meal so simple. And by cooking chicken in your crock pot, you’ll end up with really moist meat that’s actually rotisserie-like in flavor. Yum!

Once the chicken is done, you can serve it with classic sides, like mashed potatoes, stuffing, green beans, etc. Or, you can shred it for tacos or soups. Crock Pot Roasted Chicken

Ingredients
  • 1 (5 lb) roasted chicken
  • ½ cup butter
  • 2 cups chicken stock
  • ½ onion, sliced thinly
  • 1 tsp dried tarragon
  • 1 tsp dried oregano
  • 1 tsp dried parsley
  • 1 tsp lemon pepper
  • Salt and pepper to taste
Instructions
  1. Place the roaster chicken in the crock pot, then rub chicken down with butter.
  2. Season with all spices, sprinkling liberally.
  3. Pour in stock and then drop in sliced onions.
  4. Allow the chicken to cook on high for 5 hours in the crock pot.
