Homemade Pizzas: Tex-Mex Tortilla Pizza Recipe

This play on pizza is a really fun and easy recipe to throw together on a busy weeknight. The tortillas crisp up in the oven, creating a very thin crust that you can load up with all of your favorite toppings.

For the recipe below, I went with a Tex-Mex theme and used ground turkey, black beans, corn, red onion, and spinach, substituting the usual pizza sauce for a flavorful BBQ sauce. But I encourage you to play around with the toppings and create your own masterpiece!

Ingredients
  • 2 large, soft tortillas
  • ½ lb ground turkey
  • ½ red onion, diced
  • 4 Tbsp BBQ sauce
  • ½ cup corn
  • 1 cup mozzarella cheese (add more if desired)
  • ½ cup black beans
  • ½ cup spinach, chopped
Instructions
  1. Cook turkey till done. Then, set aside.
  2. Cover a cookie sheet with aluminum foil. Place the two soft tortillas on the cookie sheet.
  3. Rub the BBQ sauce on the bottom of the soft tortilla, then top with the cooked ground turkey. Follow with the red onion, mozzarella cheese, corn, black beans, and chopped spinach.
  4. Place the pizzas in the oven for 15 minutes. Serve and enjoy!
