
It’s Friday night pizza night!
This recipe is a bit different from your typical pizza recipe. I love pairing my pizza with Caesar salad, so I decided to try combining the flavors of the two, and the result is this delicious Caesar pizza. It’s Caesar salad (with chicken) on a pizza! And it’s so good.
Quick Tip: To speed up the preparation process, pick up a pre-cooked rotisserie chicken from the grocery store on your way home from work. Then, you don’t have to cook the chicken for the pizza; you can just shred some of the rotisserie and you’re ready to go!
Caesar Pizza Recipe
Makes 2 pizzas
- 4 large leaves romaine lettuce
- 1 tbsp olive oil
- 2 boneless, skinless chicken breasts cooked and chopped (or you may opt for a rotisserie chicken, shredded)
- 1 cup Caesar dressing (add more if desired)
- 2 cups freshly grated Parmesan cheese
- 2 pre-made pizza crusts, such as Boboli
- Salt and pepper to taste
1. Preheat oven to 400 degrees F.
2. Place romaine leaves with inside facing down on a cookie sheet. Place in oven for about 5 minutes till they are lightly charred on the edges. Remove from oven and chop into bite-size pieces. Don’t tun off the oven.
3. Place the olive oil in a saute pan and then add the chicken. Cook till golden brown, and season with salt and pepper. Then, chop into bite-size pieces. If you have opted to use a rotisserie chicken, pull chicken apart into bite-size, shredded pieces. The rotisserie pulls apart better when still hot.
4. Place the two pizza crusts on a cookie sheet.
5. Spread the Caesar dressing onto the pizza crusts. Top with the chicken and charred romaine lettuce, and sprinkle with the Parmesan cheese.
6. Place in the oven for 15 minutes until crust is golden brown and cheese has melted.
7. Top with extra cheese if desired.
